1 1/3c.RAW whole wheat or whole grain orzowill cook to yield 2 c.
16oz.1 lb. Boneless, skinless chicken breast meat
Spray Pan Oilas needed
1c.Unsalted Cooking StockChicken
4tbsp.1/4 c. Garlic & Herb Soft Spreadable Cheese
1c.canneddrained and chopped artichoke hearts
1tsp.freshly crushed or minced garlic
4oz.4 cups “packed” fresh baby spinach leaves
¼tsp.or to taste fresh cracked pepper
Garnish: ½ lemoncut into 4 wedges
Instructions
Cook orzo in boiling water according to package directions. Drain and hold aside.
Cut chicken into strips. Heat medium non-stick sauté pan and spray with pan spray. “Sear” chicken approx. 5 minutes on all sides until golden brown but not cooked all the way through.
Remove chicken pieces from pan and hold aside.
Add chicken stock to pan and heat to simmer over medium heat. Stir in cheese, artichoke hearts, garlic and reserved chicken and simmer 5 min. Season with pepper, as desired.
Add spinach and cover to steam just until spinach is wilted.
Toss mixture gently and plate with ½ c. cooked orzo per portion. Garnish with lemon wedges.
