Potato gnocchi are delicious and craveable. But wait, what is even sweeter than a plate of potato gnocchi? Well, SWEET POTATO GNOCCHI, of course! Golden soft pillows of happiness can be served with a variety of sauces and condiments or simply tossed with butter and cheese. Best of all, you can find sweet potato gnocchi in the refrigerated section of your favorite market.
Place cream in a small saucepan over medium-low heat. Bring to a simmer and cook for two minutes. Season with salt and pepper to taste.
Add Gorgonzola cheese and basil; stir over very low heat until melted. Keep sauce warm while cooking gnocchi.
Cook gnocchi separately in salted boiling water according to package directions.
Drain gnocchi and place them in the pan with the sauce along with basil leaves, stirring gently on low heat until all gnocchi are coated with sauce.
Transfer to a serving dish, sprinkle with grated Parmigiano Reggiano and chopped walnuts and serve immediately. Enjoy!
