¼cup/2 oz. bittersweet chocolate70% cocoa, perhaps mint- or orange-infused
6Tbsp./3 oz. reduced fat sour creamdivided
1 ½tsp./¼ oz. dark brown sugardivided
1cup/4 oz./8 each strawberries finely chopped strawberries
2tsp.finely chopped mintfor garnish, optional
Instructions
Bring a large pot of salted water to a boil. Cook the angel hair pasta according to package directions. Drain and reserve.
Place the chocolate in a microwave-proof bowl and melt it in 15 second increments until melted. Stir in 2 TBSP of the sour cream and ½ tsp. of the dark brown sugar. Reserve.
Stir together the remaining sour cream and sugar. Reserve.
Check the chocolate sauce. If it’s cool and stiff, heat it again in the microwave for 10 seconds. Toss with the pasta. Divide between 4 bowls.
Top each portion with reserved sweetened sour cream and ¼ of the strawberries. Sprinkle with mint, if using.
