Tripoline
Tripoline pasta is a long pasta ribbon with ruffles on one side. It is very similar to mafalda – the main difference being ruffles being on only one side. Because one side is straight and the other is ruffled, one side will better hold sauce than the other.
It is believed that this pasta shape originated in the Campania region.
