Tropical Jerk Chicken Pasta
Give pasta a tropical taste with spicy jerk chicken, cooling coleslaw and mango. It’s a complete, flavorful meal made for summer days (or when you just want to pretend it’s summer!).

Tropical Jerk Chicken Pasta

Ingredients
- 2 tbsp. vegetable oil
- 1 tbsp. jerk seasoning
- 1 tbsp. fresh lemon juice
- 6 boneless skinless chicken thighs about 1.5 lb.
- 8 oz. angel hair pasta
- 2 cups coleslaw mix
- 1 ripe mango peeled and sliced
- 1/4 cup chopped fresh cilantro
- 2 tbsp. low-fat coleslaw dressing
- Pinch each salt and pepper
Instructions

Preheat oven to 375°F. Mix together vegetable oil, jerk seasoning and lemon juice.

Cover and refrigerate chicken for 1 hour or up to overnight.

Bake on greased foil-lined baking sheet for 25 to 30 minutes or until well glazed and internal temperature reaches 165°F.

Meanwhile, cook pasta according to package directions. Drain, reserving 1/2 cup pasta liquid.

Toss together pasta, pasta liquid, coleslaw mix, mango, cilantro, coleslaw dressing, salt and pepper. Serve chicken over pasta. Garnish with sliced red chili peppers if desired.
