Borscht Pasta Salad
This healthy pasta salad is a twist on borscht – the classic Eastern European soup – that’s as bright and beautiful as it is tasty and nutritious. It’s easy to pack up and take with you for lunch or a picnic!

Ingredients
- 4 oz. campanelle
- 1/2 cup/8 oz. low-fat Greek yogurt divided
- 2 tbsp. lemon juice
- 2 tbsp. olive oil
- 4 tsp. chopped fresh dill divided
- 1 tsp. grainy mustard
- 1 clove garlic minced
- 1/4 tsp. each salt and pepper
- 1 cup/4 oz. shredded beets
- 1/3 cup/1 oz. thinly sliced red onion
Instructions

Cook campanelle according to package directions. Drain and let cool completely.

Meanwhile, stir together 1/3 cup yogurt, lemon juice, oil, 1 tbsp dill, mustard, garlic, salt and pepper. Toss with pasta.

Stir in shredded beets and red onion. Serve with dollop of remaining yogurt and sprinkle with remaining dill.
Recipe Notes
Tip:
- Add 1/2 tsp. finely grated lemon zest to salad for a fresh finish.
