RD Recommends Pasta as a way to Sneak Veggies into your Diet!
Looking to sneak veggies into your diet? In a recent article for Foxnews.com, registered dietitian Patricia Bannan recommends a few ways to convince the picky eaters eaters in your family to eat their nutrient-dense vegetables!
Bannan notes that by switching from a meat sauce to a vegetable-packed sauce, you won’t loose the texture or richness but you can gain some essential vitamins!
Want to give it a try? Here’s how she adds veggies into her pasta meals: “Dice one-half of an eggplant and one cup of mushrooms and sauté in a skillet until cooked. Stir in your favorite marina sauce and serve with whole-grain pasta. If you’re really committed to vegging it up, use a potato peeler to make zucchini ribbons to go with your pasta. Saute the zucchini ribbons in a little olive oil and toss with your cooked pasta and you’re good to go.”
