Creamy Spinach & Artichoke Chicken with Orzo
Ingredients
- 1 1/3 c. RAW whole wheat or whole grain orzo will cook to yield 2 c.
- 16 oz. 1 lb. Boneless, skinless chicken breast meat
- Spray Pan Oil as needed
- 1 c. Unsalted Cooking Stock Chicken
- 4 tbsp. 1/4 c. Garlic & Herb Soft Spreadable Cheese
- 1 c. canned drained and chopped artichoke hearts
- 1 tsp. freshly crushed or minced garlic
- 4 oz. 4 cups “packed” fresh baby spinach leaves
- ¼ tsp. or to taste fresh cracked pepper
- Garnish: ½ lemon cut into 4 wedges
Instructions

Cook orzo in boiling water according to package directions. Drain and hold aside.

Cut chicken into strips. Heat medium non-stick sauté pan and spray with pan spray. “Sear” chicken approx. 5 minutes on all sides until golden brown but not cooked all the way through.

Remove chicken pieces from pan and hold aside.

Add chicken stock to pan and heat to simmer over medium heat. Stir in cheese, artichoke hearts, garlic and reserved chicken and simmer 5 min. Season with pepper, as desired.

Add spinach and cover to steam just until spinach is wilted.

Toss mixture gently and plate with ½ c. cooked orzo per portion. Garnish with lemon wedges.
