Angel Hair Pasta with Beet Pesto and Goat Cheese

Ingredients
- 2 oz. angel hair pasta or spaghettini
- 1 cup chopped cooked beets
- 2 tbsp. /1/4 oz. finely grated Parmesan cheese
- 2 tbsp. olive oil
- 2 tbsp./3/4 oz. toasted walnuts
- 1 tbsp. lemon juice
- 1/4 tsp. each salt and pepper
- 1/2 oz. crumbled goat cheese optional
- 2 tsp. chopped fresh chives

Cook angel hair according to package directions; drain.

Meanwhile, in small food processor, pulse beets, cheese, olive oil, 1 tbsp. water, walnuts, lemon juice, salt and pepper until smooth. (Tip: Add one clove of garlic with walnuts, if desired.)

Toss pasta with pesto.
