Angel Hair Caprese Salad Cups

Angel Hair Caprese Salad Cups
Prep Time 20 minutes
Ingredients
- 4 TBSP Extra virgin olive oil
- 4 TBSP Prepared basil pesto
- 2 TBSP White balsamic vinegar
- 8 oz broken angel hair pasta
- 16 leaves Boston bibb lettuce
- 8 oz chopped fresh mozzarella
- 1 1/2 cups diced tomato or quartered cherry tomatoes
- 16 small low-fat chicken, turkey, or vegetarian meatballs*
Instructions

Cook the angel hair pasta according to package directions until it is al dente. Drain and reserve.

In a medium bowl, mix oil with the pesto and vinegar. Add the pasta and mix well.

Divide the pasta among the lettuce leaves and add mozzarella, tomatoes, and one meatball.
Recipe Notes
*This dish can easily be made vegetarian by using vegetarian meatballs instead of chicken or turkey.
