Mexican-Spiced Ground Turkey with Mezze Penne
Spice up any lunch with this penne dish full of fresh Mexican flavors. This pasta recipe is so versatile that it tastes great warm, at room temperature, or cold. It’s a big step up from the same old sandwich!
Mexican-Spiced Ground Turkey with Mezze Penne

Ingredients
- 4 oz. mezze penne
- 1 Tbsp. vegetable oil
- 2 cups/8 oz. finely chopped onions
- 1 20.8oz/1.3 lb. package ground turkey
- 1 tsp. cumin
- 2 cups/8 oz. corn kernels from approximately 2 ears
- 1 15 oz. can black beans, drained and rinsed
- 1 lb. prepared salsa
- 1 cup/4 oz. diced avocado
Instructions

Bring a large pot of salted water to a boil. Cook the penne according to package directions. Drain and reserve.

Heat a large sauté pan over medium heat. Add the vegetable oil and onions. Cook until softened and starting to brown (about 3 minutes).

Add the turkey and cumin, breaking up the turkey with a fork as it cooks. Cook until water evaporates and the turkey starts to brown (about 5 minutes).

Add the corn, black beans, salsa, and reserved pasta. Stir to combine and heat through. Just before serving, stir in the avocado.

Serve hot, at room temperature, or cold!
