Couscous Crab Pearl Pepper Poppers
This super fun couscous appetizer was the winner of our Pasta Presto Recipe Contest! The pepper and couscous combo is an easy and delicious way to impress guests.
Couscous Crab Pearl Pepper Poppers
Prep Time 30 minutes
Ingredients
- 5 oz box pearled couscous mixed basil & herb
- 8 ounces crab meat
- ¼ cup extra virgin olive oil divided
- juice of 1 lemon
- ¼ cup tablespoons pimentos chopped
- ¼ cup gourmet peppers chopped
- 2 tablespoons Italian parsley chopped
- 1 teaspoon red pepper flakes
- 20 peppeadew peppers
Instructions

Cook couscous according to package and allow cooling.

Combine crab meat, two-thirds of the olive oil, lemon juice, pimentos, gourmet peppers, parsley, and pepper flakes in a mixing bowl.

Stuff peppers with couscous filling. Chill until ready to serve and drizzle with remaining olive oil.
